Mini Cheesecake

Super delicious and super-fast mini cheesecake recipe for two people by @soyketogenic.

It’s designed to be made in the air fryer, although it can also be made in a fan oven or in a normal oven

Ingredients:

  • 100g cream cheese
  • 1 egg
  • 3 tbsp cream
  • Dash of Stevia
  • Vanilla essence

For the base:

  • 2 tbsp coconut flour
  • 2 tbsp melted butter

Finally add the ketoprotein apricot jam

Instructions:

Mix and beat:

  • 100g cream cheese
  • 1 egg
  • 3 tbsp cream
  • Dash of Stevia
  • Vanilla essence

Once everything is beaten in a bowl, to make the base.

  • 2 tbsp coconut flour
  • 2 tbsp melted butter

Stir until well mixed, spread into a bowl or cup and put it in the air fryer for 5 – 8 min. If you are using a normal oven increase the time to about 10 – 12 min until golden brown.

Now add the initial mixture to the base and put it back in the fryer for 20 – 25 minutes until golden brown or 30 – 35 minutes in a normal oven.

Finally, spread the ketoprotein apricot jam on top and enjoy!!!
