How to make Ke-torrijas:
1. Bring the cinnamon, citrus zest and milk to the boil for 10 minutes. At this point you can sweeten the milk if you like it sweeter and less citrusy.
2. Put the slices of bread in a wide bowl and soak them in the milk. Leave them like this for half an hour, so that they soak up the flavours and become fluffy. I In the meantime, preheat the oven to 180 degrees.
3. After half an hour, beat the eggs and dip the slices in it, then place them on waxed paper and bake in the oven for 30 minutes.
4. Halfway through baking, turn them over. They are ready when the edges are toasted.
5. For a sweet touch, sprinkle some erythritol and cinnamon powder on top and that’s it!
Next time we’ll have to double the ingredients, so we don’t have to share them. 
My grandmother used to heat up the leftover milk and give it to me (I was the youngest in the family). With a little bit of erythritol you can have a glass of delicious citric milk as an accompaniment.
